Yet another dish with broccoli: Broccoli soup
Because my Poached broccoli with oyster sauce only used up half a broccoli, so I used the rest of the broccoli to make this soup. This is also a dish from broccoli that I find very easy to eat, and it would be delicious as an appetizer or as a main dish served with bread

Servings: 2 people
- Half a broccoli head
- Half an onion or a small onion
- 2 clove of garlic
- 1 celery stalk
- Meat stock
- 15g butter
If you are a vegetarian/vegan, replace meat stock with vegetable stock, and butter with cooking oil.
1. Preparing the ingredients: Rinse the broccoli and chop into bite-size pieces. Peel and mince the onion. Mince the celery stalk. Peel and mince the garlic cloves.

2. Put the butter in a saucepan, heat on medium high heat, when the butter is melted, add the onion, garlic and celery and toss for 5-7 minutes until the onion is soft and translucent.
3. Add the broccoli, pour in the meat stock so it’s barely cover the broccoli, reduce the heat to medium, put the lid on and let it simmer for 5-7 minutes until the broccoli is softened but is still green in colour. Use an emergency blender or a normal blender to blend the mixture until it’s smooth, season with salt and pepper to your taste.
All that’s left to do is top the soup with some grated cheese and enjoy
